USDA Prime graded steaks are delightfully tender and juicy with a buttery flavor that makes them distinctively superior to any other steak. Of all the beef produced in the US, only the top few percent qualify for this noteworthy distinction. USDA Prime beef contains the greatest degree of marbling and is generally sold exclusively to fine restaurants and steakhouses. Stock Yards is among the rare few that deliver these steaks directly to consumers.

USDA Choice, second only to USDA Prime, offers exquisite tenderness and taste. This is the most popular grade of beef for its well-marbled texture and buttery-rich flavor. While just over half of the beef graded each year earns a grade of Choice, Stock Yards chooses only the most well marbled and highest quality Choice available.

Wet-aging and dry-aging improves both the tenderness and flavor of fine cuts of meat. Stock Yards' wet-aging process allows beef to age in vacuum-sealed packages to develop the extraordinary richness and tenderness. Dry-aging produces a deeper, almost "woodsy" flavor sought by many beef connoisseurs. Stock Yards dry-aged beef matures beneath ultraviolet light in a controlled airflow environment to impart the richest flavor. Hand-trimmed, interior cuts deliver only the most juicy, tender and flavorful steak experience.

All of Stock Yards steaks are hand trimmed by the same master butchers who supply their fine restaurant customers, then expertly aged to maximize tenderness and flavor. Each steak is then carefully inspected to ensure the customers get only the best.
